Nancy's Corn Chowder

Ingredients
- 1 1/2 tsp oil
- 2 large onions, chopped
- 1 stalk celery, chopped
- 1 red pepper, diced
- 3 cloves garlic, minced
- 1/2 tsp cumin
- 3 cups chicken broth
- 1 tsp thyme
- 1 bay leaf
- 2 cups frozen corn
- 1 potato, peeled, diced
- 2 T cornstarch
- 1 12 oz can evaporated milk
- salt and pepper to taste
- pinch cayenne pepper
- optional - fried bacon pieces
Instructions
- Cook onions in oil over low heat stirring for 5 minutes
- Add celery, red pepper, garlic and cumin, cook stirring for 2-3 minutes
- Add corn and potatoes, simmer till vegetables are tender, 5-10 minutes
- Combine cornstarch and evaporated milk, stir until smooth
- stir milk mixture into soup and cook, stirring until thickened, 2 minutes.
