Nancy's African Chicken Soup

Ingredients
- 1 Tbsp Olive oil
- 1/8 tsp cayenne pepper
- 1/8 tsp black pepper
- 1 1/2 cups onion, diced
- 1/2 green pepper, diced
- 1/2 red pepper, diced
- 1 Tbsp Garlic
- 4 cups chicken stock
- 2 cups water
- 2 cans diced tomatoes
- 1-1 1/2 lbs diced chicken breast
- 1/3 cup brown rice
- 1/2 cup crunchy peanut butter
Instructions
- Heat oil in large saucepan, add diced onions, peppers, and garlic. Saute
- until the onions start to brown. Season with cayenne and black peppers.
- Add chicken stock, water, tomatoes, rice and chicken. Simmer until the
- rice and chicken are cooked (30-40 minutes). Stir in the peanut butter.
- Salt to taste. Freezes well
