Ingredients
- 2 Tb olive oil
- 1 medium onion, finely chopped
- 1-2 garlic cloves, peeled & finely chopped
- 12 oz. marinated artichoke hearts, drained and chopped
- 4 eggs, lightly beaten
- 1 tsp salt
- 1/3 c. fine dry breadcrumbs
- Freshly ground black pepper
- tsp Tabasco sauce
- 1/2 pound sharp cheddar cheese, grated
- 2 Tb finely chopped fresh parsley
- 1 Tb finely chopped fresh oregano
Notes
- Preheat the oven to 325°F. Grease a 9-inch square baking pan and set aside.
- Heat the olive oil in a frying pan over medium-high heat, add the onion and garlic, and cook until soft, about 5 minutes. In a medium mixing bowl, combine the sautéed onions with the artichoke hearts, eggs, salt, breadcrumbs, pepper, Tabasco, cheese, parsley, and oregano. Mix well and pour into the prepared pan.
- Bake 30-35 minutes, or until set in the center when lightly touched. Let cool in the pan and cut into 1-inch squaress
